Granola Bar Cookies
yield: about 24
Preheat oven to 350 degrees
2 sticks butter (16 Tablespoons)
1 ½ cups brown sugar
2 eggs
2 Tablespoons vanilla
2 cups chopped dates
2 ¼ cups flour
1 tsp salt
1 tsp baking soda
½ tsp baking powder
4 cups You Struck Gold granola
1 cup chocolate chips
Beat the butter in a mixer of by hand and add brown sugar, eggs and vanilla. Stir in dates.
In a separate bowl, combine flour, salt, baking soda and baking powder. Add slowly to the moist ingredients until blended. Add granola and chocolate chips.
Line a jelly roll pan (about 11”x17”) with parchment paper and press dough onto paper, evenly filling out to the edges.
Bake for 27 to 32 minutes, until golden brown on top.
Cool and cut into 2”x3” pieces, or smaller if desired. Keep in airtight container with deli paper between layers, or freeze.
Cold Mornings Oatmeal with Granola
One serving
In a small pot, combine:
1/3 cup oats
1 Tbs ground flax seed
½ tsp cinnamon
2 Tbs granola of your choice
(I like Classic Blend or Ginger Maple Fix for this)
1 cup liquid
(could be milk, water, or soymilk)
Pinch of salt
Bring to a simmer on medium heat (or low if you’re going to go check your email) but keep an eye on it. Stir it occasionally and it will be done in about 5 minutes.
Sweeten with honey or brown sugar. Or not at all. I slice a banana in the bottom of my bowl and pour the oatmeal on top. Other fruits are really good cooked in with the oats: blueberries and strawberries especially.
Granola Pancakes
Makes 12-14
In a large bowl combine with a whisk:
1 ¾ cup unbleached flour
¼ cup cornmeal (preferably stone ground)
2 Tbs ground flax seed
2 tsp baking powder
½ tsp salt
Make a well in the center of this and beat in:
2 eggs
¾ cup buttermilk
¾ cup orange juice
1/3 cup canola oil or melted butter
Now stir in 1/3 cup granola.
(We like My Cherry Amour because it’s not as sweet, but you can put your favorite in. You Struck Gold would add a sweeter flavor. )
On a lightly buttered skillet on medium heat, scoop out pancakes (I use an ice cream scoop) and turn after a couple of minutes.
Enjoy with maple syrup or honey, or your favorite topping.
